So for some reason I wanted to try vegan tacos?! lol I made this recipe up all by myself and thought I’d give it a go. It was super simple and easy to make and it actually turned out pretty spectacular… you need to try them!
- Tortilla Shells
- 1 Taco Seasoning Packet
- 1 Medium Onion
- 3 Avocados
This recipe didn’t go exactly as I had planned originally. I had first thought to cook the rice with the taco seasoning, but we had leftover rice we needed to use up. So instead, I mixed the seasoning in with the avocados! I decided not to use the full packet, so adjust this to your liking. Doing this works just as well as adding it to the rice. 🙂 Also, we used salsa, but this could easily be substituted with fresh tomatoes and other veggies!
Go ahead and chop up your onion and smash your avocados. Feel free to add the taco seasoning where you prefer. We used frozen corn and steamed it up in the microwave.
Next you need to make your taco!! Put a layer of avocado all over your taco shell.
Next line up all your toppings! Add salt and pepper to taste.
Now roll it on up and enjoy! 😀
Note: This recipe may not be completely “vegan” due to the sugar that may be found in some of the items listed. Substitutes for all of the ingredients can easily be found in your local grocery store. Refined sugar is not considered vegan due to the refining process (google it).
